For those sundays when I wake up a little later than usual, I like to have a big and delicious brunch! When I took my first bite I literally said out loud, “Oh yeah this is much better than Sonic!” Let me explain… Sonic was a great contributor to my freshman 15 because I ate their Super Sonic Breakfast Burritos on a regular. This is my homemade version and it is perfection.
- 1 egg, 1 eggwhite
- 1/2 Sweet Potato
- Turkey Sausage
- Hot Sauce of choice
- Sliced Jalapeños
- Seasonings of choice ( I used Tony’s, salt and pepper)
- Shredded Cheese
- Tortillas ( I use the carb balance ones)
- Olive Oil
Peel the sweet potato and slice to desired thickness. Turn pan to medium-high with 1-2 TBS of olive oil and add sweet potato, flip and cook for about 15-20 min or until soft. While the sweet potato is cooking, cook the desired amount of turkey sausage and set aside when ready. Cook the eggs last and scramble with salt and pepper. Once everything is cooked, warm your tortillas in the pan and sprinkle with cheese to melt and add all the ingredients to make your burrito. Top with jalapeños and hot sauce. Enjoy your healthy mock-sonic breakfast burrito!
